Cheese Scone recipe

Ingredients & Quantities

  • 2 cups of Flour
  • 1 tsp. of Cream of Tartar
  • 1 tsp. of Baking Soda
  • 1/4 tsp. of Ground Pepper
  • 1/4 tsp. of Mustard Powder
  • Pinch of Salt
  • 3 tbsps. of Unsalted Butter
  • 1/2 cup of Milk
  • 1/2 cup of Shredded Cheddar Cheese

Method

  1. Sift together the flour, cream of tartar, baking soda, pepper, mustard and salt into the bowl of a food processor with metal blade inserted; add 2 tablespoons of the butter.
  2. Pulse about five times until lumps of the mixture are like peas.
  3. Add 1/2 cup of milk and continue to pulse. Add up to 3 tablespoons of additional milk until the dough is soft but not sticky. Add the cheese and pulse about another four times.
  4. Place the dough on a floured surface and knead lightly two or three times.
  5. Roll the dough to 3/4-inch thickness and cut out scones with a 2-inch cutter. Leftover dough scraps can be rerolled for cutting.
  6. Melt remaining tablespoon butter and brush over scone tops. Place scones on a greased baking sheet.
  7. Bake until golden, for about 10 minutes, in a pre-heated oven at 425F/210C.
